JANUARY 21  SUTTER MEATS BUTCHERY WORKSHOP AND GOOD STOCK FARM DEMO-DINNER  Saturday, Noon, $250

Terry Ragasa (Sutter Meats) and Sandy D’Amato (Good Stock Farm) team up for a full day of butchery and cooking.  Join us for this unique opportunity to witness and learn how to transform fresh local product into restaurant-quality dishes.
The day starts at noon at Sutter Meats in Northampton.  Watch and learn behind-the-scene techniques of Terry Ragasa while he masterfully butchers a farm-raised steer at Sutter Meats in Northampton.  Terry will field all of your questions, identify and discuss the attributes of each cut of meat and give pointers on how to best prepare them.
Then we’re off to Good Stock Farm in Hatfield for a cooking demonstration in their teaching kitchen.  Sandy D’Amato will transform select beef cuts into delicious dishes using a variety of cooking techniques while you follow along with your packet of recipes.  After the lesson, we sit down at the Good Stock family table to enjoy the feast and have a new appreciation for the journey our food has taken to our plates.

PORK BUTCHERY CLASSES AT SUTTER MEATS

 


With such continued enthusiasm for our PORK BUTCHERY CLASSES, we've added OCTOBER, NOVEMBER & DECEMBER DATES

Our two-hour Saturday afternoon Pork Fabrication Class is an interactive demonstration with Terry. He will break one side of a locally raised pig, field all of your questions, identify and discuss the attributes of each cut of meat and give pointers on how to best prepare them. In addition to instruction on seam butchery technique and whole muscle utilization, each student will take home a generous supply of mixed pork cuts. To ensure the best possible experience, this will be an intimate class limited to six students.

We are offering the class OCTOBER 1st & 29th, NOVEMBER 12th & 19th, and DECEMBER 3rd &10th. The class will last two hours, from 1-3pm and cost $100. LAMB BUTCHERY DEMO & MULTI COURSE DINNER with SUTTER MEATS & GOOD STOCK FARM

SATURDAY, MARCH 12th SUTTER MEATS and GOOD STOCK Bring the FARM to the TABLE

Sutter Meats and Good Stock Farm team up for a full day of butchery and cooking.  Join us for this unique opportunity to witness and learn how to transform fresh local product into restaurant-quality dishes. Starting at noon, watch and learn the behind-the-scene techniques of Terry Ragasa while he masterfully butchers a farm-raised lamb at Sutter Meats in Northampton. Then travel to your next stop, Good Stock Farm in Hatfield, for a cooking demonstration where Chef Sandy D’Amato transforms these gems into delicious dishes using a variety of cooking techniques. We sit down at the Good Stock family table, warmed by the fireplace, to enjoy the feast and have a new appreciation for the journey taken by the food to our plates.  After the exciting day of watching two craftsmen at work and an evening of community camaraderie, we say good night with a packet of the day’s recipes and full bellies.  Not baaaaaaaad.
